Recipe: Cadwell's Corner Meat Loaf (buttermilk, cinnamon and allspice)

CADWELL'S CORNER MEAT LOAF

8 slices good-quality oatmeal bread
3/4 cup buttermilk
2-1/2 pounds ground sirloin
3 garlic cloves, peeled and crushed
1 cup freshly snipped parsley
1 tablespoons ground cumin
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon Tabasco sauce
2 tablespoons soy sauce
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 cup ketchup
1 egg
Salt and freshly ground pepper (to taste)

Preheat oven to 375 degrees F.

Tear bread into small pieces, or use a food processor to make crumbs. Place in a large bowl and pour buttermilk over; squeeze with your hands until it is absorbed.

Add all other ingredients, and knead with your hands until blended. Do not overwork or loaf will be tough and too tightly packed. Mound mixture in a large (9x5x3-inch) loaf pan.

Bake for 1 hour and 20 minutes.

Makes 1 (9x5-inch) loaf
