Recipe: Brothy Shrimp and Rice Scampi

BROTHY SHRIMP AND RICE SCAMPI



2 cans (14 1/2 oz. each) Swanson Chicken Broth (3 1/2 cups)
3/4 cup uncooked regular long-grain white rice
1 tbsp. olive oil
1 lb. fresh or frozen large shrimp, shelled and deveined
4 cloves garlic, minced
2 tbsp. lemon juice
2 green onions, thinly sliced

Heat broth in saucepan to a boil. Add rice. Cover and cook over low heat 20 minutes.

Heat oil in skillet. Add shrimp and garlic and cook 5 minutes or until done, stirring.

Place shrimp in bowls. Stir lemon juice into broth mixture and pour over shrimp. Top with onions.

Makes 4 servings
