Recipe: Jalapeno Potato Salad (using garlic, herbs, oil and lemon or lime juice)

Salads - Potato, Pasta
JALAPENO POTATO SALAD

2 lbs medium red potatoes
2 jalapeno peppers, minced
2 stalks celery, thinly sliced
2 cloves garlic, minced
3 tbsp fresh lemon juice (or lime juice)
1 tbsp sugar
1 tbsp chopped fresh parsley
1 tsp chopped fresh mint
1 tbsp olive oil
1/4 tsp each salt and pepper

Cook potatoes till tender; drain. Cool and peel.

Stir together remaining ingredients. Pour over potatoes, and gently toss to coat. Cover and chill.

Makes 6 servings
