Recipe(tried): Sunday Dinner at Our House - Whole Wheat Bread (bread machine), Baked Ham with Orange-Pineapple Glaze, Easy Au Gratin Potatoes, Easy Microwave Sweet Potatoes, German Chocolate Upside Down Cake
Menus Today for lunch we had: baked ham with pineapple/orange glaze, easy au gratin potatoes, EASY Microwave Sweet Potatoes, zipper cream peas, CLAUSSEN Pickles, whole wheat bread with butter, sweet tea with lemon, and German Chocolate Upside Down Cake.
WHOLE WHEAT BREAD
Made in the Breadmaker (1 1/2 pound loaf)
1 cup lukewarm milk
3 T. warm water
4 tsps. honey or sugar
1 T. butter
1 1/2 cups whole wheat flour
1 1/2 cups bread flour
3/4 tsp. salt
1 tsp. yeast
Spray the baking pan and the paddle with PAM. Put the ingredients in the breadmaker in the order listed here. Select the basic white cycle and the light or medium crust.
BAKED HAM WITH ORANGE/PINEAPPLE GLAZE
1 5-6 lb. ham, rinsed well
1 12 oz. can Sprite
1 cup orange juice
1/2 cup Coke
1 T. flour
1 Reynolds Plastic Cooking Bag
Place the flour into the bag and shake around. Put the ham inside the bag. Mix the Sprite, Coke, and orange juice together and pour over ham. Cut 6 slits into the plastic bag to prevent an explosion. Bake ham at 325 degrees. Bake each pound 20 minutes. When ham is done, remove the dish from the oven, open the bag, and remove the ham. Throw the Sprite/Coke mixture away. Prepare glaze.
ORANGE/PINEAPPLE GLAZE
1 jar pineapple preserves
2 T. MAILLE Old Style Dijon Mustard
1/2 cup orange juice
Mix these ingredients together and pour over ham. Place the ham back into the stove and cook for 5-7 minutes. Remove the ham from the oven and allow to "rest" for 10 minutes before serving.
EASY AU GRATIN POTATOES
1 box au gratin potatoes (prepared according to package directions)
1 cup cheese
Add the cheese to the cheese/milk mixture before baking. Bake potatoes according to package directions.
EASY MICROWAVE SWEET POTATOES
2 cans Bruce's Yams--in orange pineapple sauce
1 cup orange juice
1/2 cup light brown sugar, packed
1/2 tsp. nutmeg
1/2 tsp. cinnamon
Put the yams, along with the sauce, into a 2-qt. microwave safe bowl. Mix orange juice, brown sugar, nutmeg, and cinnamon. Pour over yams. Microwave on 50% power for 25 minutes. Serve with ham.
GERMAN CHOCOLATE UPSIDE DOWN CAKE
1 box German Chocolate cake mix, prepared according to directions on box
1 cup coconut
1 cup pecans, walnuts, or almonds
1 pkg. cream cheese
1 stick of butter
2 cups confectioners' sugar
1 tsp. vanilla extract
Preheat oven to 350. Spray a 9X13" pan with PAM. Sprinkle the coconut and the nuts in the bottom of the pan. Pour the chocolate cake batter over the coconut and the nuts.
In a microwave-safe bowl, put the stick of butter and the package of cream cheese. Microwave on 50 power for 2 minutes, or until the cream cheese is soft and the butter has melted. Add the confectioners' sugar and the vanilla extract to the cream cheese mixture. Stir until well blended. Drizzle this mixture on top of the chocolate cake. Bake for 40-45 minutes or until a knife inserted into the center of the cake comes out clean.
The whole wheat bread was just delicious. Even my picky eaters enjoyed it!
