Recipe: 1000 Palms Stuffed Dates (using sweetened condensed milk)

1000 PALMS STUFFED DATES

"A confection that's easy to make and fun to serve or give as gifts."

4 dozen dates
2 1/2 cups confectioners' sugar
1/2 cup sweetened condensed milk
Grated peel of 1 Sunkist lemon
1/2 cup finely chopped walnuts or pecans
1/4 cup finely chopped dried apricots
Walnut or pecan quarters or halves (optional)

To prepare the dates for stuffing, cut each along one side and remove the pits. In a bowl, combine the confectioners' sugar, condensed milk, and lemon peel (mixture will be stiff). Stir in chopped nuts and apricots.

Dust hands with additional confectioners' sugar and shape mixture into small balls (about 3/4 inch); stuff into prepared dates. Top each with a walnut quarter or half.

Makes 4 dozen
