Recipe(tried): A few more Christmas brunch ideas
Breakfast and Brunch My Husband and I love to have brunch on Sundays so I have quite a few good recipes. Here are a few of our favorites:
Stuffed French Toast
8 slices French bread, (1-1/2 inches thick)
2 Tablespoons butter, softened
1 package (8 ounces) breakfast sausage patties, cooked
1 cup (4oz.) shredded swiss cheese
2 eggs
1/2 cup milk
1-1/2 teaspoons sugar
1/2 teaspoon cinnamon
Maple syrup
*Cut a pocket in the crust of each slice of bread. Butter the inside of pocket. Cut sausage into bite size pieces; toss with cheese. Stuff into pockets. In a shallow bowl (I use a pie pan), beat eggs, milk, sugar and cinnamon; dip both sides of bread. Cook on greased hot griddle until golden brown on both sides. Serve with syrup. An unusual combination but very tasty!
Cheesy Ham Cups
6 thin slices of Deli ham
1/2 cup green onions, chopped
2 cups cheddar cheese, chopped
6 eggs
1 carton (8oz.) plain yogurt
*Place each ham slice in greased 10 oz. ramekin or custard cup. Sprinkle with green onions and one cup of cheese. Beat eggs and yogurt until blended. Pour into cups and sprinkle with remaining cheese. Bake at 350 degrees 25-30 minutes or until knife inserted near middle comes out clean.
Individual Baked Eggs
1/2 cup seasoned croutons
1 tablespoon butter
2 tablespoons diced ham
2 eggs
2 tablespoons shredded cheddar cheese
*Put croutons in greased indivual cassreole dish. Dot with butter. Sprinkle with ham. Carefully break each egg on top and sprinkle with shredded cheese. Bake at 350 degrees 15 minutes or until eggs are set. (this is nice because you can make however many you need)(I have changed the croutons to leftover hash browns, the cheese to swiss and the ham to cooked, crumbled bacon or breakfast sausage with good results too.)
A fresh squeezed juice would be nice with any of these but sometimes, depending on the occasion, I like to serve a fresh fruit salad with them. Here's our favorite:
Fruit Salad With Citrus Sauce
Use any kind of fruit in season or whatever you like. Here are some suggestions:
Fresh blueberries, washed and drained
Fresh strawberries, cleaned and sliced
Fresh kiwi fruit, peeled and sliced
Fresh pineapple, cleaned and chunked
Fresh peaches, peeled and sliced
Grapes, halved
Apples, peeled and sliced
Bananas, peeled and sliced
Sauce:
1/3 cup brown sugar
juice of 2 lemons
juice of two oranges
1 cinnamon stick
*Cook over lo-medium heat and bring to simmer. Simmer for about 10-15 minutes. Cool and remove cinnamon stick. Pour over fresh fruit and chill well.
