Recipe(tried): Almondine Orange Roughy for Carol

Almondine Roughy

This is the GREATEST [and I don't like fish that well]!! You can also use sole fillets.

1/2 cup sliced almonds
1/3 cup butter
1 Tbs. lemon peel
1 tsp. dried dill weed
1/4 tsp. salt
1/8 tsp. pepper
1 lb. orange roughy fillets

Preheat oven to 350 degrees. Place butter in 9x13-inch baking dish. Sprinkle almonds all over dish. Bake 6 to 8 minutes until butter is melted. Stir and cook 3 more minutes to toast nuts. Stir in remaining ingredients [except fish]. Dry off fish with paper towels. Dip into butter mixture to coat both sides. Spoon almonds all over fish. Continue baking for 15 to 20 minutes until fish flakes with a fork. Serves 4.
