Recipe: Ann's Chocolate Chip Cookies (using oats, cinnamon and coconut)

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2 cups old-fashioned rolled oats
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups semisweet chocolate chips
1 cup flaked coconut
1 cup chopped walnuts (optional)
In a large mixing bowl, cream shortening and sugars. Add eggs and vanilla, mix well; set aside.
Combine the oats, flour, baking soda, baking powder, salt and cinnamon; add to creamed mixture and mix well. Stir in the chocolate chips, coconut and walnuts. Drop by rounded teaspoonfuls 2-inches apart onto greased baking sheets.
Bake at 375 degrees F for 8 to 10 minutes or until edges are lightly browned and cookies are set. Cool for 2 minutes before removing from pans to wire racks.
Makes 9 dozen cookies
