COCONUT CHOCOLATE CHUNK COOKIES
FOR THE COOKIES:
3/4 cup firmly packed brown sugar
1/2 cup sugar
1 cup butter or margarine, softened
2 eggs
2 cups all purpose of unbleached flour
1/4 cup unsweetened cocoa powder
1 teaspoon salt
5 squares (1 ounce each) semi-sweet chocolate, chopped
1 cup honey-roasted peanuts, coarsely chopped
2 cups coconut
FOR THE GLAZE:
1 cup powdered sugar
1 to 2 tablespoon water
TO MAKE THE COOKIES:
Preheat oven to 350 degrees F.
In large bowl, beat brown sugar, sugar and butter until light and fluffy. Add eggs; blend well.
Lightly spoon flour into measuring cup level off. Stir in flour, cocoa, baking soda and salt; mix well. Add chocolate, peanuts and coconut. Drop dough by 1/4 cup measurement 3 inches apart onto ungreased cookie sheets.
Bake at 350 degrees F for 13-15 minutes or until set. Cool 1 minute, remove from cookie sheets. Cool completely.
TO MAKE THE GLAZE:
In small bowl, blend glaze ingredients, adding 1 tablespoon of water at a time for desired consistency. Drizzle over cookies.
Makes 2 dozen cookies
