Here is a recipe for cookies that Australian and New Zealand women made to give to soldiers when they went to fight in Europe in 1915. They are called ANZAC because that stands for Australian and New Zealand Army Corp. April 25th is ANZAC day. The trip by boat was long so they needed cookies that kept. These cookies (biscuits) did not go bad but do get a bit hard. They're best if dipped in hot coffee or chocolate (or now microwaved briefly). They're delicious!
Anzac Biscuits (cookies)
2 cups flour
2 cups rolled oats, old fashioned
2 cups sugar
1 cup dessicated coconut(recipe calls for unsweetened but I use sweetened and it's good)
2 sticks butter (1/2lb)
2 Tbsp. Golden syrup
1/4 cup boiling water and 3/4 tsp baking soda
Preheat oven to 350.
Mix dry ingredients and set aside.
In a small saucepan melt butter and golden syrup.
In anther small pan boil 1/4 cup of water and add baking soda until dissolved. Then add to butter mixture and mix together. Pour butter-baking soda mixture into dry ingredients and stir to mix.
Drop onto ungreased baking sheet and flatten slightly.
Bake for about 15 mintues until firm and golden around edges.
