Recipe: Apple Cake

APPLE CAKE

2 eggs
2 cups sugar
1 cup vegetable oil
1 tsp vanilla extract
1/2 tsp almond extract
2 cups flour
2 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
1 1/2 tsp water
1 cup chopped walnuts
4 cups apples, coarsely chopped
2 tbsp confectioner's sugar

Grease a 9x13-inch.
In a large bowl beat eggs, sugar, oil, extracts until smooth.
Blend together flour, cinnamon and salt
Add flour mixture to egg mixture, blending well.
Dissolve baking soda in water.
Add to batter. Combine well.
Add nuts and apples. Combine well. Batter will be very thick.
Spoon batter into pan.
Bake 350 oven for 55 min. or until toothpick comes out clean. Cool in pan.
Dust with icing sugar when completely cool. Garnish with apple wedges in center of cake.
