Toasted Coconut Pie

The April 1967 Better Homes and Gardens had a recipe for toasted Coconut pie. It remains my mother's favorite desert. Here is the recipe as she gave it to me. We actually don't use the pie crust in my house. Too many calories and I really am not fond of it. But this is a great desert without the crust. -- Naomi

3 eggs, beaten
1 1/2 cups sugar
1/2 cup butter, melted
4 tsp lemon juice
1 tsp vanilla
3 1/2 oz toasted coconut (about 1 1/3 cups)
pie shell

Thoroughly combine first 5 ingredients. Stir in coconut.

Place in pie shell and bake in a moderate (350 F) oven for 40-45 minutes or until a knife inserted 1/2 way between the edge and center is clean.
