Recipe: Drunkin Bread Pudding

DRUNKIN BREAD PUDDING

2 eggs
2/3 cup brown sugar
1 tsp vanilla
1 tsp cinnamon
3 tbsp melted butter
1 1/3 cup milk
1/4 cup chopped pecans or almonds (optional)
1/4 cup raisins, optional
6 slices buttered, firm bread, cut into 1-inch cubes
Brandy to taste, optional

Beat the egg's until frothy. Mix in the sugar, vanilla, cinnamon and butter. Beat until well blended. Stir in the milk and nuts and raisins, if used. Stir the bread into the milk mixture. Toss until the bread is soaked. Let stand for 5 min. Spoon into a buttered 1 1/2 qt. casserole dish.
Bake at 325F for 30 minutes; turn heat up to 425. Bake an additional 15 min. Serve hot with a splash of brandy, if desired or a dollop of whipped cream.
