DENISE'S COUNTRY APPLE CRISP
Recipe By :1991 Dallas Cowboys Wives' Cookbook
Makes 12 servings.
1 package yellow cake mix
1/3 cup margarine or butter -- softened
2 eggs
1 can apple pie filling -- (20 oz.)
1/2 cup pecans or walnuts -- chopped
1 teaspoon vanilla
1 cup sour cream
1 teaspoon cinnamon
1/2 cup brown sugar -- firmly packed
Preheat oven to 350 degrees. In a large bowl, combine cake mix, margarine,
and one egg. Blend at low speed until crumbly. Press into ungreased pan
(9x13). Spread pie filling on top. Combine brown sugar, cinnamon, and
nuts. Sprinkle over the apples. In a small bowl, blend the sour cream, one
egg, and vanilla. Pour over sugar and apples. Bake for 30-40 minutes, or
until topping is slightly golden. Serve warm or cool; refrigerate
leftovers.
TIP: To use fresh apples, combine 1/2 cup firmly packed brown sugar with 2
tablespoons cornstarch. Stir in 1 cup water and 1 tablespoon lemon juice;
add 4 cups thinly sliced apples. Heat to boiling; simmer 5 minutes.
Substitute apples for pie filling.
