APPLE DUMPLINGS DELUXE
FOR THE DOUGH:
1 beaten egg
1 (8 ounce) carton dairy sour cream
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons Clabber Girl Baking Powder
1/4 teaspoon baking soda
1/4 teaspoon salt
FOR THE FILLING:
4 cups thinly sliced, peeled cooking apples
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
FOR TOPPING:
1 1/2 cups water
1 1/4 cups packed brown sugar
1 cup sugar
2 tablespoons cornstarch
2 tablespoons lemon juice
2 tablespoons margarine or butter
Half-and-half cream, light cream, or ice cream (optional, for serving)
Grease a 13x9x2-inch baking pan; set aside.
TO MAKE THE DOUGH:
In a medium mixing bowl combine egg and sour cream.
In a small mixing bowl stir together flour, the 2 tablespoons sugar, the baking powder, baking soda, and salt; add to sour cream mixture. Mix well.
TO MAKE THE DUMPLINGS:
On a lightly floured surface, roll dough into a 12-inch square. Spread apple slices atop dough.
In a small mixing bowl combine the 1/4 cup sugar, cinnamon, and nutmeg; sprinkle atop the apples.
Carefully roll up the dough. Cut into twelve 1-inch thick slices. Place slices, cut side down, in the prepared baking pan.
In a medium mixing bowl stir together water, brown sugar, the 1 cup sugar, the cornstarch, and lemon juice; pour over slices in the pan. Dot with margarine.
Bake, uncovered, in a 350 degree F oven for 35 to 40 minutes or till golden. Cool slightly.
TO SERVE:
Spoon warm dumplings and juices into individual dessert dishes. If desired, serve with cream.
