Recipe: Apple Muffins with Streusel Topping (using apple pie filling)

FOR THE TOPPING:
1/2 cup brown sugar
3 Tbsp flour
2 Tbsp sugar
1 Tbsp ground cinnamon
1/4 cup butter
1/2 cup chopped nuts
FOR THE MUFFINS:
1/2 cup oil
2 eggs
1 tsp vanilla
1 (21 oz) can apple pie filling
2 cups flour
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
Mix together topping ingredients; set aside.
Mix sugar, oil, eggs and vanilla. Add apple pie filling (chop the apples).
Combine all dry ingredients. Add to apple mixture. Fill greased muffin tins half full. (Do not over fill the muffin tins!) Sprinkle the topping on top of muffin batter.
Bake at 350 degrees F for 15-20 minutes.
