Recipe: Apple Pecan Pound Cake

Apple Pecan Pound Cake

2 cups sugar
1 cup vegetable oil
3 eggs, beaten
3 cups diced apples (peeled if desired)
3 cups sifted all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
2 teaspoons vanilla
1 cup pecan pieces

Preheat oven to 350 degrees. Grease and flour a bundt pan or tube pan.

Mix sugar, oil, eggs, apples, flour, salt, soda, cinnamon, vanilla and pecans. Batter will be stiff. Pour into pan.

Bake 1 hour and 15 minutes, or until cake tests done. Cool.
