Actually, as a former Apple-slave, I can safely tell you what goes in the
Santa Fe Chicken Salad

Regular salad greens,
a grilled marinated (tequila & lime juice) chicken breast, seasoned with
fajita seasoning (try plain old Kroger brand, it works just fine)
The cripsies are just tortilla strips, fried (you can use crumbled tortilla
chips)
The salad has the usual diced tomato, onion, and jalapenoes (Applebee's pico
de gallo)
Garnished with a 1 oz scoop each of sour cream and guacamole. (9 and 3
o'clock, respectively)
Sprinkled with chopped scallions for a garnish and a 2 oz ramekin of salsa
at12 o clock

Now the all-important ingredient: the dressing. Applebee's used to ship
their mexi-ranch, but now they make them make it. Applebee's makes it from
Naturally Fresh brand lo-fat/fat-free (whatever it is - it's the orange
labelled jar) ranch dressing mixed with plain old salsa. GOOOOOOOD
STUFFF!!!! If you like the Santa Fe you might also like the Chicken Fajita
Roll-up and the Tequila Lime Chicken - both have the same theme tastes and
both use the awesome mexi-ranch dressing too!
