Recipe(tried): Apricot Chicken Breasts (using onion soup mix and apricot jam)

I'm sure this has been posted before, but last night I made:

Apricot Chicken

4 chicken breasts (bone in, skin removed)
1 pack dry onion soup mix
1/2 jar apricot jam
1/2 bottle "Light" Italian salad dressing.

Mix together onion soup mix, apricot jam and dressing. Arrange chicken in pyrex dish, pour half of mix over chicken. Bake at 375* for about 1.5 hours, basting with remaining mix and turning chicken a couple of times. The sauce thickens and darkens the longer you bake it!

I also find that baking it on the bottom rack of the oven makes the sauce darken better.

Tonight we are having leftovers because it is too cold to go shopping for new ingredients (-25*!!!), and we are expecing 8-10 inches of snow.
