Recipe(tried): Australian Meals - Curried Rice Salad
MenusI think that steph has pretty well covered it, but I will add a few more ideas that come to mind. Our pumpkin soup is usually made with either butternut or Queensland blue, the latter being stronger in taste, and served with a dribble of cream on top. Another soup we love is pea and ham soup. Also Ozzies consume gallons of tomato sauce (ketchup) we have it on almost everything (not our coffee though) Ozzie damper is a type of bread, very easily made without yeast. Ozzie meat pies (with tomato sauce) are an all-time favourite, made in 4" square tins and eaten in hand and NOT knife and fork. Desserts, we also have fruit salad, made with as many seasonal fruits as can be found, and served with cream or ice-cream. The pudding Steph mentioned is also sometimes topped with warmed golden syrup. There are always cakes, the most popular being Lamingtons, chololate cake, and sultana cake. The tea is drunk by the bucket full, kids have fruit cordial, and the men Fosters (beer) And of course the inevitable Anzacs. A salad that is always popular is curried rice salad.
Curried Rice Salad
1 cup uncooked rice
1 red capsicum, (bell pepper) chopped
3 medium onions choppped
1 apple, peeled and cored and chopped
1 tablespoon sugar
parsley chopped
1/2 to 3/4 cup sultanas
1/2 cup salad oil
1/2 cup vinegar
1 tablespoon curry powder (or to taste)
1/2 teaspoon tumeric, (mixed with a little cold water)
Cook rice and tumeric in plenty of boiling salted water till tender. Drain well and allow to cool. Add other ingredients. Mix well and serve. Yum
Crushed pineapple and/or chopped banana can also be added.
