Recipe: Bacon, Tomato and Cheese Waffles (Bisquick)
Breakfast and BrunchBACON, TOMATO AND CHEESE WAFFLES
"Colorful waffle version of the popular BLT in cheesy sauce."
FOR THE CHEESE SAUCE:
3 tablespoons butter or margarine
3 tablespoons Bisquick baking mix
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon ground black pepper
1 1/2 cups milk
1 1/2 cups shredded process sharp Cheddar cheese
FOR THE WAFFLES:
2 cups Bisquick baking mix
2 tablespoons vegetable oil
1 egg
1 1/3 cups milk
FOR SERVING:
Tomato slices
Crisp bacon slices
TO MAKE THE CHEESE SAUCE:
Heat butter over low heat in 2-quart saucepan until melted. Stir in 3 tablespoons baking mix, the salt, mustard and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly.
Remove from heat; stir in 1 1/2 cups milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
Reduce heat; stir in cheese until melted. Cover and keep warm while preparing waffles.
TO MAKE THE WAFFLES:
Beat 2 cups baking mix, the oil, egg and 1 1/3 cups milk with hand beater until smooth.
Pour batter onto center of hot waffle iron. Bake until steaming stops. Remove waffle carefully.
TO SERVE:
Top with tomato slices, warm cheese sauce and bacon slices.
Makes 6 servings
