Recipe: Bakery Soft Chocolate Chip Cookies

BAKERY SOFT CHOCOLATE CHIP COOKIES

1 cup Golden Crisco
1 1/2 cups firmly packed brown sugar
1 tbsp vanilla
2 eggs
2 1/4 cups all purpose flour
1 tsp salt
1 tsp baking soda
1 cup semi sweet chocolate chips
1 1/4 cups coarsely chopped pecans (we leave out and add 1 cup more chips)

Preheat oven to 375 degrees F.

Cream Crisco, brown sugar and vanilla in large bowl at medium speed of electric mixer for 2 minutes or well blended and creamy.

Add eggs beating 1 minute till thoroughly blended

Combine flour, salt, and baking soda. Add to creamed mixture gradually, beating on low speed for 1 minute or just until blended.

Stir in chocolate chips and pecans. Drop by heaping spoonfuls (2 tbsp) on ungreased cookie sheets leaving about 3-inches between cookies. They spread a lot..

Bake one cookie sheet at a time at 375 degrees F for 8-10 minutes for chewy or 11-13 minutes for crisp. (I cook till lightly brown about 7 minutes in my oven)

Cookies will still appear moist - do not overbake! Cool 2 minutes on sheet. Place foil on the counter. Remove cookies to foil and cool completely.

RECIPE NOTES:
These are really soft. They firm up with cooling. Bake till they are lightly brown only. Let cool on the pan for a few minutes, then remove to counter. Store in airtight container.
