Recipe(tried): Banana Chutney

Banana Chutney

This is delicious with ham, cold meats and particularly with cheese and fresh bread.
Penny.

4 ripe bananas. roughly chopped
2 onions, finely chopped
1 inch piece of ginger, peeled and grated
4 oz dates, stoned and chopped
6 oz soft brown sugar
1/2 pint malt vinegar
1/2 pint water
1/2 teaspoon chilli flakes or dried chilli powder
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon

Put all ingredients into a large saucepan (except salt and sugar). Simmer gently until most of the liquid has evaporated. This will take about 1 to 1/1/2 hours. Stir often to avoid sticking.

Keeping heat low add sugar and salt and stir until sugar has dissolved.

Raise heat and boil rapidly stirring, until thick.

Pour into sterilized dry jars. Store in refrigerator.
