BANANA COCONUT BREAD
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
10 tablespoon butter, softened
1/2 cup sugar
1/2 cup brown sugar
2 eggs
2 very ripe bananas
1 cup shredded coconut, divided use
Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan.
Sift the flour, baking soda, and salt together.
Cream butter and sugars until creamy. Add eggs, one at a time and combine well. Mix in bananas, then dry ingredients. Mix almost all the coconut, reserving 2 tablespoons.
Place batter prepared pan.
Bake for 60 to 70 minutes, until loaf feels firm to the touch. About half way through baking, sprinkle the remaining coconut on top.
Makes 1 loaf
