RAB/SAB (2002): I have tried this recipe for spice muffins and they are quite tasty:
1 packaged spice cake mix
1/2 cup egg substitute
1 (15 oz) can pure pumpkin (not pie filling)
Mix it up and using only the ingredients above. Pour into paper-lined or sprayed muffin cups depending on the size you make between 2-3 points per muffin. 350F for 20-25 min.
I have also used chocolate cake mix and they are just as delicious. Makes about 18 muffins
Elaine (2002): The recipe I have uses:
1 box of reduced fat chocolate cake mix
1 (12 oz) can of pumpkin (not pie filling)
That's it - mix and put into nonstick pan that's been sprayed with cooking oil and bake at 350F for 20-25 min.
This makes 12 muffins at 2 WW points each. They're quite a decent size although not gigantic like some of the store-bought "supersized" ones.
