Recipe: Banana Ripple Cake (using Maraschino cherries, chocolate chips and sour cream)
Desserts - CakesBANANA RIPPLE CAKE
1/2 cup semi sweet chocolate chips
1/8 cup hot water*
2 cups flour
3/4 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1/2 cup butter, softened
1/4 cup water
1 1/2 cups sugar, divided use
2 eggs, separated
1 cup mashed bananas
1/3 cup sour cream
1 tsp. vanilla
1/3 cup Maraschino cherries, well drained, finely cut
Preheat oven to 350 degrees F. Butter and flour bottom of a 9-inch tube pan or Bundt pan.
Melt chocolate with 1/8 cup hot water, stirring until smooth; set aside to cool.
Combine flour with baking soda, salt and baking powder. Set aside.
Cream butter in large mixing bowl. Gradually add 1 1/4 cups sugar, cream at high speed until light and fluffy. Add egg yolks, beat well; set aside.
Combine bananas, sour cream and vanilla. At low speed add alternately with flour mixture to creamed mixture, begin and end with flour mixture. Blend well after each addition. Stir in cherries; set aside.
Beat egg whites until soft peaks form. Gradually add the remaining 1/4 cup sugar, beating until stiff but not dry. Gently fold into batter.
Place 1/3 of batter in pan. Drizzle 1/2 of the chocolate mixture over batter. Repeat with 1/3 batter and remaining chocolate. Top with remaining 1/3 batter.
Bake at 350 degrees for 50-60 minutes or until cake tests done when touched lightly. Set cake in pan on rack to cool, do not invert pan while cake cools.
*Another almost identical recipe calls for 1/4 cup hot water. You could start with 1/8 cup hot water and add another 1/8 cup gradually to make the chocolate a consistency that can be drizzled.

Hi Reese,
I hope someone will have the exact recipe you're looking for. This is the recipe closest to your description that I've found so far. If you want to experiment, since the chocolate is just a ripple in the cake, you could leave it out and add 1 cup chopped nuts to the batter with the cherries. Let us know how it turns out if you try it!

Betsy
