Recipe: Barbecued Pork Cream Soup

BARBECUED PORK CREAM SOUP

1/2 cup butter
1/2 pound ground barbecued pork
1/2 cup flour
2 tsp Worcestershire sauce
2 tsp salt
1 tsp ground white pepper
1 tsp Tabasco sauce
2 cups chicken broth or consomme
1 quart whole milk
4 tbsp Madeira
FOR GARNISH:
barbecued pork strips
green onions, chopped

Melt butter in a large saucepan over low heat. Add ground barbecued pork and mix together. Add flour and stir constantly for 4-5 minutes, but don't allow to burn.

Add Worcestershire, salt, pepper, and Tabasco to broth and then slowly add to first mixture. Slowly add milk and stir until blended. Let simmer 7-10 minutes and stir constantly. Just before serving, stir in Madeira.

Serve garnished with barbecued pork strips, fresh green onion bits and a splash of Madeira.
