BASIL AND PARSLEY PESTO
Pesto is a special sauce, spread or seasoning for a variety of recipes.
1/3 cup packed fresh basil leaves
1/3 cup fresh parsley
1/4 cup pine nuts
1 teaspoon chopped fresh oregano leaves
2 teaspoons finely chopped fresh garlic
1/4 teaspoon pepper
1/3 cup olive or vegetable oil
1/2 cup freshly grated Parmesan cheese
Place basil leaves, parsley, pine nuts, oregano leaves, garlic and pepper in food processor bowl with metal blade or 5-cup blender container. Cover; process until herbs are finely chopped (30 to 45 seconds).
While food processor is running, slowly add oil through feed tube until well mixed (20 to 30 seconds). Stir in Parmesan cheese by hand. Store refrigerated.
To serve, stir into hot cooked penne, fettuccine or fusilli.
TIP: Pesto can be frozen up to 6 months.
