Recipe(tried): BBQ Beef Sandwiches, Cole Slaw

Today for dinner we had BBQ Beef Sandwiches and cole slaw. The BBQ beef sandwich recipe is one I found on the internet that I modified a little, it is wonderful as it cooks in the crockpot and requires only the occassional attention. With it I served cole slaw using a recipe that I found on Steph's Country Kitchen Web Site, it is really good. I hope everyone had a wonderful weekend, but unfortunately it is almost over. BBQ Beef Sandwiches

1 (3 lb) chuck roast
1 cup water
4 tbsp. vinegar
2 tbsp. Worcestershire sauce
1 1/2 tsp. chili powder
Dash of seasoned salt
1/2 green pepper, chopped
1/2 bottle hickory barbecue sauce
Kaiser rolls

Place chuck roast in crock pot on low in water, add vinegar, worcestershire sauce, chili powder, dash of seasoned salt, and green pepper. cook on low 10 to 12 hours (or high 4 to 5 hours.)

Drain crock pot of liquid, and place roast on a plate. Using two forks, shred meat apart. Return to crock pot, and add 1/2 bottle barbeque sauce.Cook an additional 1 1/2 or until hot.

Serve on Kaiser rolls (or hamburger buns, it is also good on sliced french loaf bread).

Cole Slaw

1 head cabbage, shredded
1 small carrot, shredded
2/3 cup mayonnaise
1/4 cup sugar
2 tbsp. milk
2 tbsp. vinegar
1/2 tsp. salt
1/4 tsp. pepper

Toss cabbage and carrot in bowl. Combine the other ingredients and add to cabbage mixture. Chill till serving.

*I use a packaged contianer of slaw mix to avoid having to drag out my big food processer, and I also cut back a little on the sugar as it seems a little too sweet if you use the entire 1/4 cup.
