From Beth Sigworth
Makes 5 -6 dozen
Chocolate Chip lovers beware! These irresistible cookies are my own recipe, and they are nice and thick, soft and chewy, and absolutely hard to resist!
2/3 cup butter flavored shortening
2/3 cup butter, softened
1 cup white sugar
1 cup light brown sugar, packed
2 eggs
1 tablespoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans (optional)
2 cups semisweet chocolate chips
Preheat oven to 375 degrees F (190 degrees C).
2 Mix thoroughly the butter flavored shortening, sweet cream butter, sugars, eggs, and vanilla. Stir in remaining ingredients.
Use a measuring tablespoon to round dough into balls. Don't roll the balls, just make them rounded. Place onto ungreased baking sheets.
Bake 10 to 12 minutes, or until centers are set and very lightly browned. Don't overbake. Cool 2-3 minutes before removing from baking sheets.
Make sure you have lots of ice cold milk!!!
Colette, I found this recipe at cookierecipe.com a while back and so far it has been the best chocolate chip cookie recipe I have made. The cookies are not flat and have some body to them, are soft and chewy. They make quite a few so I've been making up the dough balls and popping them in the freezer so I can take out a few when we need them. Hope you enjoy. If you would be interested in a chewy PB Choc Chip recipe I have a good one too, let me know if you want me to post it.
