BILL'S CHILI
serves 18 people
12-inch Dutch oven
2 to 2 1/2 lbs lean ground beef
1 1/2 cups onions, diced
2 stalks celery, sliced
1 green or red bell pepper, diced
1 large carrot, sliced thinly
1 jalape o pepper, finely chopped
2 8 ounce cans tomato sauce
1 to 2 cups water (or more if needed)
1 tablespoon chili powder
1 tablespoon sugar
1/2 cup catsup
1 to 2 large cans red chili beans
2 teaspoons salt
1/4 cup teaspoon black pepper
2 tablespoons white vinegar
1 chocolate bar
Brown ground beef and drain off fat. Add onions and cook until tender. Add celery, carrots, & pepper. Put in tomato sauce. Add rest of ingredients except for beans and chocolate bar. Bring to boil, reduce heat and simmer with lid on until carrots and celery are tender. Stir every 10 minutes with straight edge stirring stick to avoid scorching on bottom of pot. Rinse beans and pour into chili. Cook another 15 to 20 minutes. Just before serving break up chocolate bar and stir into chili. Serve with grated Cheddar cheese.
Note: You may used dry kidney beans instead of canned, just follow instructions on package to prepare your beans.
If you like a more authentic chili add about 1 tablespoon finely diced cilantro.
