Recipe: Mediterranean Winter Salad

Mediterranean Winter Salad
(this is great for dinner, brunch or a buffet, and oranges are just what we need this time of year)
Serves 6-8

6 navel oranges (because they are seedless)
1 red onion, slivered into paper thin rings
12-16 good quality black olives, pitted and cut in half
1 TBLS chopped fresh mint (or cilantro or Italian parsley, or mixed)
6 TBLS olive oil
1/2 tsp. ground cumin
Salt and pepper to taste

Prepare the oranges by taking off thin slices on either end of the orange and standing it on end. With a sharp knife, cut away the rind. Then, turn it on its side and slice about 1/2” thick.

Mix juices from cutting the orange with the cumin, salt and pepper, and herbs. Toss with oranges, onions and oranges. Allow to sit for about 2 hours.

Can be served on salad greens or alone. dressing with beef salad and then top lettuce leaves.
