Recipe: Blender Vegetable Salad (using lemon gelatin)

BLENDER VEGETABLE SALAD

1 (6 oz) pkg lemon-flavored gelatin
2 cups boiling water
1/4 cup ice water
1 cup chilled pineapple juice
1/4 tsp salt
1 tbsp vinegar
2 tbsp chopped green bell pepper
1/4 cup chopped cabbage
1/4 cup diced carrot
1 tbsp chopped onion
1/4 cup chopped celery
2 tbsp chopped radishes
1/4 cup diced cucumber
1/4 cup shredded Cheddar cheese

FOR THE GELATIN MIXTURE:
Dissolve gelatin in boiling water. Add 1/4 cup ice water, pineapple juice, salt, and vinegar; stir well. Chill until consistency of unbeaten egg white.

FOR THE VEGETABLE MIXTURE:
Place all vegetables in container of electric blender; cover with ice water. Chop fine; drain.

Add the vegetable mixture to thickened gelatin. Stir in cheese. Spoon into a 5-cup mold. Refrigerate until firm.
