Barbara posted a lovely pizza recipe, and it inspired my creative side. I wanted to make a couple for a function I was attending, plus, my neighbour had been in the hospital and I wanted to take something over to her place.
Well, I tweaked the recipe to suit myself, and everyone asked for the recipe, so, I hope Barbara will not take offence.
It is blueberry season here, so I expect we will be having this another time or two. Yummers!
BLUEBERRY CRUMBLE PIZZA
2 prepared 12-inch pizza crusts (I used whole wheat)
12 oz cream cheese, softened
1/2 cup sweetened condensed milk
1 egg
1 tsp vanilla
1.5 cups fresh or frozen blueberries
1/2 cup brown sugar
1/2 cup all-purpose flour
1 tsp cinnamon
3 TBS margarine or butter, softened
Preheat oven to 425 degrees F.
Place pizza crusts on round pizza pans.
In a large mixing bowl, combine cream cheese, condensed milk, vanilla and egg until well blended. Pour mixture over crust. Sprinkle blueberries evenly over creamy mixture.
In a small bowl, combine brown sugar, flour, cinnamon and margarine until the mixture resembles coarse crumbs. Sprinkle crumb topping over blueberry mixture.
Bake 18 to 20 minutes, Remove from oven, allow to cool completely, slice and serve. Refrigerate leftovers.
Makes two pizzas, 8 to 10 servings.
enjoy! I am off to drop my son off for more blueberry picking (summer job), and beg a few berries from the farm owners because mine are not ready yet. Then back home to bake another blueberry pizza!
