Boilermaker Cheddar Chowder

Purdue takes to the court this season with a shoot from the hip offense, led by guard Chad Austin. This creamy, ham flecked chowder from the university in West Lafayette, Indiana, will score plenty of points at your dinner table.
1 1/2 cups water
2/3 cup potatoes -- diced
1/3 cup carrots -- diced
2 tablespoons onion -- chopped
1/3 cup all purpose flour
2 cups milk
1 cup cheddar cheese -- 4oz shredded
1/2 cup American cheese -- 2oz shredded
2/3 cup cooked ham -- diced
Pepper
In a 3-quart saucepan, combine water, potatoes, carrots and onion. Bring to boiling; reduce heat. Cover and cook for about 15 minutes or just till vegetables are tender. Don't drain. Meanwhile, in a screw top jar, combine flour and milk; cover and shake till well combined. Stir milk mixture into vegetable mixture. Cook and stir till mixture is thickened and bubbly. Add cheeses and ham. Cook and stir over low heat till cheeses are melted. Season with pepper. Makes 6 servings.
Note: Double the recipe, if you like.
