Bowtie Pasta with Chicken and Broccoli
serves 4
2 t. olive oil
2 skinless & boneless chicken breasts, cut into strips
2 c. broccoli florets
1 c. chicken broth
2 garlic cloves, minced
1 roasted red bell pepper, chopped
1/4 t. black pepper
1/4 t. thyme
1/2 t. Italian seasonings
3 oz. cream cheese, softened
1 t. paprika
4 c. bow tie pasta, cooked accord. to pkg. dir.
In a large skillet, saute the chicken strips til golden, add garlic and cook 2 more minutes. Add broccoli, bell pepper, broth, and seasonings. Cover and cook stirring occasionally til broccoli is tender about 8 more minutes. Remove from heat and stir in cream cheese to make a sauce. Add the drained bow ties and toss with a little sprinkling of parmesan.
Take to picnic site in covered plastic dish. Serve at room temperature.
