ISO: Outdoor turkey cooking- in ground

Help! I would love to get the best way to make a turkey or game hen out in the desert while playing with our ATV's. Has anyone slow cooked a turkey in the ground with coals, covered with a metal lid? Any info would be great! Need by Thanksgiving!!
