Brie with Roasted Garlic and Apples in Phyllo
1 (12-13 ounce) round of Brie
2 heads roasted garlic
1 Granny Smith apple
8 sheets Phyllo dough
melted butter
Roast the 2 whole heads of garlic for about 45 minutes at 300 F. Increase oven temperature to 325 .
Slice the round of Brie in half horizontally, keep cold. Place one sheet of Phyllo dough on board and brush with melted butter, top with another sheet, and brush with butter (place the sheet a bit off kilter from first sheet), repeat with remaining dough. Place bottom half of Brie in center of dough, cut side up. Top with roasted garlic cloves. Peel, core and thinly slice apple. Place slices on top of garlic, evenly. Top with remaining half of Brie, cut side down.
Carefully bring up Phyllo dough, pleating as needed, covering entire round of Brie. Place Brie on baking sheet and brush entire outside with melted butter. Place in oven and bake for 25-30 minutes.
