Recipe: Whole Roasted Garlic (low fat)

Whole Roasted Garlic (low fat)

4 medium heads garlic, unpeeled
1/2 cup chicken broth
2 tsps olive oil
3 sprigs fresh rosemary
ground pepper to taste

Preheat oven 400F. Spray a 6-inch shallow baking dish with nonstick cooking spray. If open garlic cloves are desired, slice off tops of garlic heads just below stems.

Add all ingredients to dish and toss to coat garlic.

Cover with foil and bake until cloves are golden brown and soft, approximately 1 1/4 to 1 1/2 hours, checking liquid occasionally. If broth evaporates, add a little water.

Remove foil and cook additional 10 minutes. Let cool and serve drizzled with any remaining broth in pan.

Squeeze onto bread or toss with pasta.
