BASMATI RICE WITH ORANGE AND PISTACHIOS
2 teaspoons canola oil
1 cup chopped red onions
1/2 teaspoon turmeric
2 cups raw basmati rice
2 cups hot water or vegetable broth
2 cups orange juice
1/4 cup chopped shelled pistachios*
Salt and fresh-ground black pepper, to taste
Heat the oil in a nonreactive 21/2-quart saucepan with tight-fitting lid over medium heat. Add the onions and turmeric and saute 1 minute until onions are softened and turmeric is fragrant.
Add the rice and saute 1 minute to coat.
Add the hot water or vegetable broth and orange juice, bring to a boil, reduce heat, cover and simmer, 25 minutes until the liquid is absorbed and the rice is tender. Add a little more liquid if the rice is not quite tender and cook for a few minutes longer, if necessary.
Add the pistachios, salt and pepper.
*You can use walnuts, pine nuts or even peanuts instead of pistachios, if you prefer.
