Broccoli Wolkey Salad
2 heads fresh broccoli
1 small bunch green onions,chopped fine
1 [3 oz.]pkg. ramen noodles, discard flavor pack
1 cup coarsley chopped walnuts or pecans
1 stick (1/2 cup) butter, melted*
1 cup sugar
1 cup canola oil
1/2 cup red wine vinegar
4 tsp. soy sauce
Salt and pepper, optional
Wash broccoli and cut into florets; combine with green onions and set aside. Crush ramen noodles in bag [not too fine but when opening bag break up the larger pieces].Combine with nuts on cookie sheet and pour melted butter over them. Bake at 350 degrees until golden brown, stirring occasionally.
Dressing:
Combine sugar, oil and vinegar with whisk. Add soy sauce and adjust to taste adding salt and pepper if necessary.
Toss dressing with vegetables. You can sprinkle the nut mixture on top or serve in a separate bowl so guests can add as much as desired.
Serves 8 to 10.
*I question the amount of butter used. I thought it would absorb into noodles more than it did. I didn't know how long to bake in the oven... maybe I didn't bake long enough. In spite of it all, it was very good. I think the dressing would be wonderful on spinach salad too. Thanks for your help! Joan
