BUTTER BEAN CASSEROLE
2 tablespoons chopped onion
2 tablespoons chopped green bell pepper
1 tablespoon butter or margarine
1 (10 3/4) ounce can condensed tomato soup
1/4 cup water
1 tablespoon brown sugar
1 tablespoon vinegar
1 teaspoon prepared mustard
2 cans (1 lb. each) butter beans, drained
Onion, sliced into rings (a few for topping, optional)
Brown onion and green pepper in butter.
Add remaining ingredients, except beans; heat a few minutes. Pour beans into buttered 1 1/2 quart casserole; pour sauce over beans.
Bake in 375 degree F oven for 45 minutes. If desired, place onion rings on top of beans before baking.
Makes 4 to 6 servings
