I was just e-mailing this recipe to a friend and thought I would like to post this one. It's a Butternut Squash Bake. I make it every Thanksgiving and its always a hit!! Enjoy!!
Butternut Squash Bake
1/3 cup softened butter or margarine
1 cup granulated sugar
2 eggs
1 (5-ounce) can evaporated milk
1 teaspoon vanilla extract
2 1/2 cups mashed butternut squash * I usually wash and peel butternut a day in advance. I then cut into chunks and boil for approx 20 minutes. I then mash the butternut and store in container overnight for ease in preparing this dish.
For topping:
1/2 cup Rice Krispies cereal
1/4 cup packed brown sugar
1/4 cup chopped pecans
2 tablespoons butter or margarine, melted
1. In a mixing bowl cream butter and sugar. Beat in the eggs, evaporated milk and vanilla. Stir in the squash (mixture will be thin.)
2. Pour into greased 11 by 7 by 2 inch baking pan. Bake uncovered in preheated 350 oven for about 45 minutes or until mixture is almost set.
3. To prepare topping combine cereal, brown sugar, pecans and melted butter; sprinkle over casserole. Return to oven and bake for 5 to 10 minutes longer or until bubbly. Makes 6 to 8 servings.
