SPICY HONEYED SQUASH
3 medium acorn squash
1/4 cup butter, melted
1/4 tsp ground cinnamon
1/2 tsp salt
1/4 tsp ground ginger
1/3 cup honey
Wash squash; cut into 3/4-inch slices, and remove seeds and fiber. Place slices in two 13x9x2-inch baking pans. Fill pans with 1/2-inch of water.
Bake at 375 degrees F for 30-35 minutes. Remove squash from oven; drain liquid from pan.
Combine remaining ingredients; pour mixture over squash.
Bake 15 additional minutes or until tender, basting frequently.
Makes 6 servings
