Butterscotch Oatmeal Cookies

Yield: 44 Cookies

3/4 cup shortening
2 tsp sugar
1 egg
1 tsp vanilla
1 pkg (4 servings) butterscotch pudding mix
1 1/2 cups oats
1 cup flour
1/2 tsp salt
1/2 tsp baking powder
1 1/2 tsp cream of tartar

Preheat oven to 350 degrees F. Grease cookie sheets. Cream shortening, sugar, egg and vanilla. Mix together the dry pudding mix, oats, flour, salt, baking soda and cream of tartar. Stir dry ingredients into creamed mixture. Roll the mixture into balls about 1 1/2 in diameter. Place on cookie sheet and flatten slightly. Bake about 10 minutes.
