Recipe(tried): Buttery Pine Nut Cookies

These cookies are very buttery and very delicious. They are one of my stand-bys and are always big favorites. I think they'd be wonderful with cashews, and might be just what you are looking for. I always double this recipe, and for Christmas I quadruple it. The recipe is from Volume 4 of Craig Claiborne's Favorites from the New York Times:

PINE NUT COOKIES
1/2 cup butter
1/2 cup sugar
1 egg yolk
1 tsp vanilla
1 cup flour
1/2 cup toasted pine nuts

Preheat over to 300. Cream together butter and sugar. Beat in egg yolk, vanilla and flouw. Mix in the nuts. Drop the batter, a teaspoon or so at a time, onto a buttered, floured cookie sheet. Bake 20 to 25 minutes, or until pale golden. Cool on rack. Makes about 30 cookies.
