Recipe: California Date Dressing

California Date Dressing

1/3 cup pineapple yogurt, low fat
1/3 cup vegetable oil
1/4 cup buttermilk
1/4 cup California dates, pitted
1 teaspoon orange juice, frozen concentrate or grated orange or lemon peel

In container of electric blender, combine all ingredients. Blend until dates are finely chopped, turning motor off and scraping down sides as needed.

Refrigerate in covered container up to 1 week.

Serve with fresh fruit, shredded carrot or cabbage salads, or use as a fresh fruit dip.

Makes 8 servings, approximately 1cup
