CARNE ADOVADA
1/8 cup hot chili powder
1/8 cup mild chili powder
2 cloves garlic, minced
1 tablespoon ground cumin
1 tablespoon dried oregano leaves
1/2 teaspoon salt
1 1/2 cups water
3 pounds lean center-cut pork chops, trimmed of visible fat
FOR SERVING (OPTIONAL):
flour tortillas
shredded lettuce
plain nonfat or lowfat yogurt
Combine all ingredients except pork.
Place pork chops in a 12-by-7 1/2-by-2-inch baking dish. Pour chili mixture over chops.
Bake at 325 degrees F for 45 minutes. Uncover and continue to bake for 30 more minutes.
Let cool and shred pork. Serve with flour tortillas, lettuce and plain nonfat or lowfat yogurt, if desired.
