Recipe(tried): Carrot and Pineapple Salad (with raisins, yogurt, coconut)

Here's a recipe my family enjoys:

Carrot and Pineapple Salad

2 cups grated carrots
1/2 cup crushed pineapple
1/3 cup raisins
1 Tbsp lemon juice
1/4 cup low fat yogurt
2 Tbsp mayonnaise
1 Tbsp sugar
2 tsp. coconut (optional)

In medium bowl combine carrots, pineapple, raisins and lemon juice.

Using a wire whisk in a small bowl combine remaining ingredients except coconut; pour over carrot mixture and toss until well coated. Cover bowl and refrigerate at least 1 hour.

Just before serving, toss again and sprinkle with coconut if desired.

Makes 2 servings
