CARROT AND ZUCCHINI BARS
1 1/2 cups all-purpose flour
3/4 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon ground ginger
1/2 teaspoon baking soda
2 slightly beaten eggs
1 1/2 cups shredded carrot
1 medium zucchini, shredded (1 cup)
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup cooking oil
1/4 cup honey
1 teaspoon vanilla
Citrus-Cream Cheese Frosting (recipe follows)
In a large bowl combine flour, brown sugar, baking powder, ginger and baking soda.
In another large bowl stir together eggs, carrot, zucchini, raisins, walnuts, oil, honey and vanilla. Add carrot mixture to flour mixture, stirring just until combined. Spread batter into an ungreased 13-by-9-by-2-inch baking pan.
Bake in 350 degree F oven about 25 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack
Frost with Citrus-Cream Cheese Frosting. Store, covered, in the refrigerator. Cut into bars.
CITRUS-CREAM CHEESE FROSTING
1 (8 ounce) package cream cheese, softened
1 cup sifted powdered sugar
1 teaspoon finely shredded lemon or orange peel
In a medium mixing bowl beat cream cheese, softened, and powdered sugar with an electric mixer on medium speed until fluffy. Stir in lemon or orange peel.
Makes 36 bars
